Baigan ka Bharta – A Smoky Delight with Poshnik’s Woodpressed Black Mustard Oil

Ingredients:
- 2 large brinjals (baingan) – about 700 g
- 3 tablespoons Poshnik Woodpressed Black Mustard Oil
- 1 ½ teaspoons cumin seeds
- 2 medium onions – finely chopped
- 2 green chilies – finely chopped
- 1-inch piece of ginger – grated
- 3 medium tomatoes – finely chopped
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 ½ teaspoons coriander powder
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves (for garnish)
Instructions:
- Roast the Baingan: Lightly brush the brinjals with Poshnik’s Black Mustard Oil and roast them directly over an open flame until the skin blisters and the flesh softens. Rotate frequently for even roasting. Let them cool, then peel off the charred skin and mash the flesh thoroughly.
- Prepare the Bharta Base: Heat 2 tablespoons of Poshnik Woodpressed Black Mustard Oil in a kadhai. Add cumin seeds and let them crackle.
- Sauté Aromatics: Add chopped onions and sauté until golden brown. Mix in the ginger and green chilies, stirring until fragrant.
- Add Tomatoes & Spices: Add chopped tomatoes along with turmeric, red chili, coriander powder, and salt. Cook until the tomatoes soften and release oil from the sides.
- Combine with Roasted Eggplant: Add the mashed eggplant into the pan. Stir well and mash continuously for a smooth, blended texture. Let it cook for 5–7 minutes so the smoked flavor absorbs into the masala.
- Garnish & Serve: Turn off the flame, sprinkle freshly chopped coriander, and drizzle half a teaspoon of Poshnik’s Black Mustard Oil on top for an aromatic finish.
Serving Suggestion:
